Aloha Friday #13

Kailani at An Island Life does Aloha Friday and here is what she has to say:

In Hawaii, Aloha Friday is the day that we take it easy and look forward to the weekend. So I thought that on Fridays I would take it easy on posting, too. Therefore, I’ll ask a simple question for you to answer. Nothing that requires a lengthy response.

My question to you is:

Since this is my #13 Aloha Friday post… Are you superstitous?

My answer?

I used to be more superstitous than I am now, but I still don’t like stepping on cracks in the sidewalk and I always hold my breath when I drive past a cemetary. I know it’s silly and I don’t have an logic behind it, but I still do it!

Pottery Barn Kids Didn’t Grow Up In A Barn

When I get a new Pottery Barn Kids catalog, my mind starts to scream, “Look at that dresser! It’s so cute! I must have that for my girls!” And I’m promptly snapped back into reality when I realize my entire home probably costs less than the contents of the room blaring at me from the magazine pages. They seriously want $99 for some polka dots sheets? Just sheets, not even pillowcases. My kids are going to pee on them twice a week! Or $1,099 (a special, no less!) for a bunk bed. I’m sure at some point during childhood, one of my dear children will scrawl POOP on the bottom of the top bunk with a Sharpie. I wonder if anyone who has ever purchased the Darcy Dresser and Changing Table regretted the $949.00 purchase as they were scrubbing what seems like gallons worth of mustard yellow baby excrement from it’s elegant, shaped pewter handles. Pottery Barn Kids may not have grown up in a barn, but my kids have certainly grown up like kids. I don’t worry about the $4 sheets my kids pee on or the $20 bookshelf that has BUM scratched in the side. Like it or not, we’re messy and happy.  I wouldn’t have it any other way.

Easy Baked Manicotti

2 cups spaghetti sauce, divided

1 egg, lightly beaten

1 3/4 cups Parmesan cheese, grated

1/4 cup pesto

12 manicotti shells, cooked, rinsed in cold water

Spread 3/4 cup spaghetti sauce on bottom of 9 x 13-inch baking dish. Mix egg, cheeses, and pesto until well blended. Spoon cheese mixture into large resealable plastic bag. Using scissors, cut a small hole in one corner of the bottom of the bag. Fill manicotti shells, one at a time, squeezing cheese mixture into both sides of the shell. Place manicotti over sauce in baking dish. Pour remaining 1 1/2 cups spaghetti sauce over manicotti. Cover with foil. Bake at 350 degrees for 40 minutes or until heated through.
